
Cacao Puffed Millet Bars

Chewy, sweet and chocolatey, these no-bake bars remind us of the classic LCM bar, but without the nasties. They are gluten free, refined sugar free and vegan, plus super quick and easy to prep. The perfect school holiday snack!

- 1/2 cup of organic maple syrup (or toast honey - I used honey)
- 1/2 cup of almond butter (could also use peanut butter)
- 3 tablespoons of cacao powder
- 4 cups of millet puffs (could also use another puffed product)
- 1 tablespoon of pure vanilla extract
- 2 tablespoons of coconut oil
Method
- Measure the maple/honey, nut butter, cacao and coconut oil into a large pot.
- Warm over medium heat, stirring almost constantly.
- Allow the mixture to come to a bubble, turn down the heat slightly, and continue stirring while it thickens up a little.
- When done, turn off the heat, add the vanilla, and give it another quick stir.
- Add in the puffs and mix well to ensure the cereal is evenly coated with the sticky mixture.
- Scrape the mixture into a parchment-lined baking pan or scoop into greased muffin cups and press it down firmly.
- Pop the pan into the refrigerator for about 30 minutes to allow it to set.
- Slice into bars and enjoy!
