Baked Oat & Sultana Protein Bars

Soft, chewy, and full of nourishing goodness — these bars are naturally sweetened, high in fibre and plant-based protein, and perfect for lunchboxes or post-gym snacks. They bake in under 15 minutes and set beautifully as they cool.

Tin size: Standard loaf tin (approx. 23 x 13 cm)

  1. Preheat oven to 180°C (350°F). Line a loaf tin with baking paper.
  2. In a large bowl, combine the dry ingredients: oats, oat flour, protein powder, salt, coconut sugar.
  3. In a separate jug or bowl, whisk together the wet ingredients: melted coconut oil (or butter), honey and tahini.
  4. Pour the wet mixture over the dry and mix well with a spoon or your hands. Add the sultanas and continue mixing until everything is fully combined and the dough holds together. 
  5. If the mixture feels too crumbly, add 1 tablespoon of milk and mix again until it has a cookie-dough-like consistency.
  6. Press firmly into the lined tin, smoothing the top and pressing it down well to help the bars hold together.
  7. Bake for 12–15 minutes, until the edges are lovely and golden.
  8. Cool completely in the tin before removing and slicing — the bars will be soft when warm but will firm up as they cool. They must be fully cold and set before slicing into approximately 6 bars with a bread knife.
