
Baked Oat & Sultana Protein Bars

Soft, chewy, and full of nourishing goodness — these bars are naturally sweetened, high in fibre and plant-based protein, and perfect for lunchboxes or post-gym snacks. They bake in under 15 minutes and set beautifully as they cool.

3⁄4 cup oat flour

⅓ cup (about 35g) vanilla pea protein powder

1⁄2 cup (112g) melted coconut oil or butter

1 tbsp milk of choice (optional, if needed)
Method
- Preheat oven to 180°C (350°F). Line a loaf tin with baking paper.
- In a large bowl, combine the dry ingredients: oats, oat flour, protein powder, salt, coconut sugar.
- In a separate jug or bowl, whisk together the wet ingredients: melted coconut oil (or butter), honey and tahini.
- Pour the wet mixture over the dry and mix well with a spoon or your hands. Add the sultanas and continue mixing until everything is fully combined and the dough holds together.
- If the mixture feels too crumbly, add 1 tablespoon of milk and mix again until it has a cookie-dough-like consistency.
- Press firmly into the lined tin, smoothing the top and pressing it down well to help the bars hold together.
- Bake for 12–15 minutes, until the edges are lovely and golden.
- Cool completely in the tin before removing and slicing — the bars will be soft when warm but will firm up as they cool. They must be fully cold and set before slicing into approximately 6 bars with a bread knife.
