This buckwheat bircher is the perfect breakfast on the go and only takes a few minutes to put together. The buckwheat packs a punch when it comes to protein, and is loaded with fibre to keep you full until lunch. The addition of superfoods like chia, goji, flax and maca make this delicious breakie one that is full of essential nutrients, as well as tasting amazing.

 

Serves 2

Ingredients:

⅔ cup buckwheat 
4 tbsp chia seeds 
¼ cup goji berries 
2 tbsp linseed brown 
¼ cup shredded coconut 
2 ½ cups liquid (nut milk or coconut water)
2 tsp maca powder 
2 tsp liquid sweetener of your choice (optional)

Method:

Add all ingredients except the liquid to a bowl and mix.

Add the liquid and stir well to combine and refrigerate for at least 4 hours or overnight.

If desired, add toppings such as fruit or nuts before devouring.

Keep in a sealed container, such as a jar, in the fridge for up to five days.
