It looks, tastes and smells like a traditional omelette yet there are no eggs in sight. Yup, you read that right. A fully egg-free, vegan omelette that is high in fibre and protein. And it’s so incredibly easy that it can be enjoyed any day of the week. Whether you need a nourishing meal to power you through the work week or you want a cosy, warming breakfast for a relaxing Sunday brunch, this chickpea omelette has got you covered.

Ingredients:

¾ cup chickpea flour 
2 ½ tbsp nutritional yeast 
½ tsp baking soda 
1 ½ tsp ground flaxseed 
¼ tsp turmeric 
½ tsp onion powder 
½ tsp garlic powder 
¼ tsp ground black pepper 
⅛ tsp salt (less or more to your personal taste preference)
1 ½ tsp lemon juice
1 cup almond milk (or other plant milk)

Method:

Add all the ingredients to a bowl and whisk together until no lumps remain.

Heat a non-stick pan over medium heat then pour half the batter into the pan.

Cook until bubbles start to appear then add fillings of your choice to one half of the omelette before flipping the other half over the top.

Cook for about 1 minute more.

Turn off the heat and put a lid on the pan, leaving for about 5 minutes. This gently steams the omelette and ensures that it is cooked all the way through.

Remove from the pan using a spatula and transfer to a plate and enjoy.
