These festive little gingerbread men are the perfect treat to pack into lunch boxes leading up to Christmas or to enjoy with a hot cuppa with friends. These ones are surprisingly gluten-free, refined sugar-free and plant-based yet not lacking in any ginger flavour or delicious crunch.

Ingredients:

1 cup almond meal 
1 cup brown rice flour 
½ cup + 1 tbsp coconut sugar 
1 ½ tbsp ground ginger 
½ tsp baking soda 
¼ tsp sea salt 
¼ cup plant based milk of choice
¼ cup coconut oil* (melted)

Method:

Add the almond meal, flour, coconut sugar, ginger, baking soda, and salt to a large mixing bowl and stir to combine.

Then add the coconut oil and plant based milk and mix well, you may find it easiest to use your hands to make sure everything is incorporated.

Gently knead the dough for about 1 minute until it comes together to form a ball.

Cover the bowl then place in the fridge for 1 hour.

Preheat your oven to 180 degrees.

Once the dough has chilled, roll it out onto a floured surface and cut out shapes using cookie cutters and place on a lined baking sheet.

Bake in the oven for 10-12 minutes of until slightly golden on the edges.

Remove from the oven to cool and harden then enjoy.
