Makes 12 serves
Add the oats, cashews and coconut to a food processor or high speed blender and process until only small chunks remain.
Add the dates and rice malt then process until the mixture starts to clump together.
Press the mix into a lined baking tin or tray and place in the freezer.
Place the dates for the caramel in a bowl with hot water and soak for about 10 minutes.
While the dates soften, drain and rinse the cashews then add them along with the maple and vanilla to a food processor.
Process this until it becomes creamy and has a nut butter consistency.
Add the softened dates and process until smooth.
Spread this onto the base layer and place back in the freezer.
To make the chocolate layer, gently heat the cacao butter, cacao powder, maple syrup and vanilla in a saucepan until everything is fully combined and it has a smooth, silky consistency.
Pour this onto the caramel layer then return the slice to the freezer for about 10 minutes.
Remove from the freezer and slice it up then enjoy this irresistible (but super healthy) caramel slice.
