Mint Choc Chip Smoothie Bowl
This is a classic ice cream flavour reincarnated into a thick and creamy mint smoothie bowl with crunchy cacao nibs. The perfect breakfast or sweet treat that even has hidden greens to put that extra spring in your step.
Ingredients:
1½ frozen bananas
1 cup leafy greens (kale or spinach)
Handful of fresh mint leaves
2 tbsp vanilla pea protein
½ tsp spirulina
¼ cup almond milk (or other plant milk)
1-2 tbsp cacao nibs (adjust according to preference)
Method:
Add all ingredients, excluding the cacao nibs, to a high speed blender and blend until smooth. You may need to pause and give it a little mix to help get it moving.
Once it is completely blended, fold in the cacao nibs then transfer to a bowl.
Top with whatever toppings your heart desires and enjoy.
