Rosemary is a fragrant evergreen herb native to the Mediterranean. It's a member of the mint family along with other herbs such as oregano, thyme and basil. It has a herbaceous, slightly bitter taste that serves as a contrast to emphasise the other flavours in a dish, similar to lemon zest. 

Uses

Dried rosemary can enhance the flavour of soups, stews, and roasted veggies. Try adding dried rosemary and salt to roasted potatoes! You don't need to cook dried rosemary for too long or they can turn bitter.
