Known for their distinctive colour, butterfly pea flowers create a beautiful vibrant blue infusion. The flowers are filled with anti-inflammatory compounds, and are particularly high in anthocyanin, a type of antioxidant also found in blueberries. Anthocyanin is known for its strong antimicrobial and antibacterial properties, its ability to regulate blood pressure and its cytoprotective activities, amongst numerous other benefits.

Uses

The blue infusion can change in colour to purple if lemon is added, or red if hibiscus is added (colour changes occur as the pH balance is shifted) - a great beverage to experiment with!
