About

Millet flour is gluten-free and vegetarian, and has no chemical bleaching, no alcohol treatment, no additives, no anti-bacterial agents, no anti-fungal agents and no bromate added. It is a pale yellow colour and is suitable in many recipes.

Uses

A little millet flour added to bread recipes will make the final loaf of bread light and fluffy on the inside with a delicious crunchy crust. When used alone, millet flour is useful in recipes for pancakes and tortillas. In many baking and cooking projects, millet flour will require the addition of some kind of binding agent, such as guar gum. Millet flour is also used for traditional unleavened bread in Africa and melt-in-your-mouth Indian roti. It is a great choice of flour for baked goods such as muffins and loaves, and can also be used as a substitute for corn flour as it works well as a thickener.
