Also known as cranberry beans. Borlotti beans are widely used in Italian cooking and have a sweetish flavour with a smooth creamy texture.
Uses
To cook borlotti beans, start by pre-soaking them overnight with a ratio of 1 cup of beans to 4 cups of water. This step is important to make the beans’ nutrients accessible and the beans themselves more digestible. To cook, cover beans in a pot with water, bring to the boil then simmer for 1 hour. Work well in casseroles and stews.
