Simple Freekeh Salad
Freekeh bulghur wheat is a delicious nutty grain that forms the base of this fresh and nourishing salad. It is light but filling and has a unique texture that makes it very satisfying, unlike a stereotypical garden salad. The combination of crunchy activated almonds, sweet sultanas, crisp cabbage and fresh lettuce complement the freekeh to create a crowd-pleasing salad that is perfect for sharing.

Ingredients:
1 cup freekeh bulghur wheat
2 ½ cups water
¼ head medium red cabbage
½ cup mesclun lettuce
¼ cup activated almonds
3 tbsp sultanas
Squeeze of lemon and seasoning to taste


Method:
Add the freekeh to a large saucepan with the water and bring to a boil.
Reduce to a simmer and continue to cook for about 15 minutes or until soft and the water has been absorbed.
Cover with a lid and let stand for a further 15 minutes.


Add to a bowl then mix in the rest of the salad ingredients.


Season to taste then enjoy.
