Blondies are a delicious decadent slice, similar to brownies, without the addition of cocoa powder. This recipe is plant-based and loaded with dark chocolate and crunchy walnuts – which gives them a nutty, caramel-like flavour. They are super easy to make and only require 9 ingredients – so they are perfect for any time that you need to whip up a tasty and crowd-pleasing treat. They are best served warm and are even better when accompanied with a scoop of your favourite dairy-free ice cream. 

Ingredients:

¾ cup coconut oil*  
½ cup almond butter  
1 cup coconut sugar  
2½ cups oat flour  
½ teaspoon sea salt + extra for topping  
1 teaspoon baking powder  
2 tbsp maple syrup*  
1 cup walnuts, chopped (⅔ cup + ⅓ cup)  
½ cup dairy-free dark chocolate chips

Method:

Preheat your oven to 180 degrees. 

In a small saucepan, melt together the coconut oil and almond butter then whisk until smooth and combined.

Pour this into a large mixing bowl then add the coconut sugar and maple syrup and whisk further.

Then to the bowl add the oat flour, baking powder, and salt and mix well. Fold through the dark chocolate chips and ⅔ cup of the walnuts.

Transfer the mixture to a lined square baking tin and press down evenly.

Top with the remaining ⅓ of the walnuts then place in the oven.

Bake for 30-35 minutes.  Once removed from the oven, sprinkle with sea salt and allow to cool fully before slicing.
