There are few better ways to beat the summer heat than with a cold, refreshing, fruity ice block. Making your own is incredibly easy and also means that you can avoid any nasties that commonly pop up in your typical plastic-wrapped popsicle. These coconut chia mango popsicles are perfect for sharing with the family to cool down from a long day at the beach. They really are a frozen slice of summer and the tropical flavours of coconut and mango are sure to make your taste buds tingle.

Ingredients:

1 cup shredded coconut 
3 cups water
2 cups frozen mango
3 tbsp chia seeds 
2 tbsp maple syrup*
Ice block moulds

Method:

Blend the shredded coconut with the water for about two minutes in a high speed blender.

Pour this through a nut milk bag to separate the pulp from the liquid.

Now you have your own fresh, homemade coconut milk!

Combine the coconut milk with the maple syrup.

In a blender, blend the mango with ½ cup of the coconut milk until it becomes a puree consistency.

Pour the coconut and maple mix into the ice block mould, leaving about 3cm at the top.

Stir in equal amounts of chia seeds into each mould then place in the freezer for about 20 minutes.

Add the mango puree on top of each ice block then insert a popsicle stick and return to the freezer for at least two hours.

After two hours they should be completely set and easy to remove from the moulds to be enjoyed!
