Basil Seed Trifle with Matcha and Berries
Basil seeds are a fascinating ingredient yet many people have never even heard of them. They are similar to chia seeds in the sense that they absorb moisture and multiply in size to create a thick, pudding-like gel yet they swell to a size much larger than chia. They also contain a wealth of nutrients including magnesium, potassium, calcium and iron, making these layered cups the perfect way to start your day. The basil seeds are high in fibre and keep you fuller for longer. When combined with matcha, berries and banana, this meal in a jar has everything you need to set you up for the best day ahead. It can also be partly prepared in advanced with the soaked basil seeds lasting up to five days in the fridge, meaning that you only need to whip up the berry nice cream when it’s time for breakie.
Ingredients:
¼ cup + 2 tbsp basil seeds
¾ cup plant milk
1 ripe frozen banana
½ cup frozen berries
1 tsp matcha
1 tbsp maple syrup*
Muesli or nuts and seeds of choice
Method:
Add the basil seeds and plant milk to a jar, seal with the lid and shake until mixed.
Leave to thicken for at least 15 minutes.
Add about ¼ of the soaked basil seeds to a bow and stir in the matcha.
Add the banana and berries to a high speed blender and blend until smooth and creamy.
Now you’re reading to assemble. Layer the basil seeds, matcha basil seeds, berry nice cream and granola until the jar is filled. Now it’s time to dig in!
