Pumpkin Seeds

Pumpkin seed pepitas come from the Cucurbita family and are a naturally nutritious and deliciously crunchy whole food. They have been eaten both raw and roasted for hundreds of years, not only for their taste but also their nutritional qualities. They are rich in vitamins E, C and A, as well as minerals magnesium and zinc. Pumpkin seeds make a tasty and protein-rich snack with a light, nutty crunch.

Crunch into a mouthful of pumpkin seed pepitas on their own for a nourishing and satiating snack, or mix them through your choice of other nuts, seeds and dried fruits to make into a scroggin. Lightly toast pumpkin seeds with optional addition of tamari or soy then sprinkle over stir-fries, salads, soups and stews for a delightful, contrasting crunch. This crunchy salad topper could be taken up a notch by including other nuts and seeds, like in this recipe for Roasted Seed Salad Toppers. Add pumpkin seeds to your breakfast foods, including smoothies, porridge, granola, muesli or simply to top a bowl of yoghurt and fresh fruit. Include them in baked goods such as energy bars, bliss balls, cakes, slices and loaves. Pumpkin seeds are a star ingredient when included in Super Seedy Crackers, and similarly in Super Seedy Bread Mixes.
