Chocolate crackles are a kiwi party favourite and these bars are a much healthier version of those sweet, crunchy delights. Not only have the ingredients of the original been swapped for more wholesome, nourishing ones but they have also assumed the shape of a bar, making them perfect for lunch boxes or snacks on the go. They have everything you’d want in a chocolate crackle; chocolatey, crispy and crunchy. These little treats are super easy to put together, so are perfect for getting the little ones involved in the kitchen and make school lunches ten times more exciting! Ingredients:

2 ½ cup Coco Crunchies 
⅓ cup coconut oil*
4 tbsp brown rice malt syrup*
4 tbsp cacao nibs 
4 small squares of dairy-free chocolate (to keep this recipe free from refined sugar, use a naturally sweetened chocolate such as Loving Earth*)

Method:

Add the coconut oil and chocolate to a small saucepan and melt over a medium heat.

In a large mixing bowl, pour the melted chocolate and coconut oil over the Coco Crunchies and cacao nibs then mix until everything is coated.

Pour the brown rice syrup and mix again until well combined and the Coco Crunchies start to clump together.

Transfer to a lined baking tray and press evenly into a square about 4cm thick.

Place this in the fridge for about 15-20 minutes or until the coconut oil has hardened and everything is stuck together.

Remove from the tray and slice into bars. Alternatively, you can take the refrigerated mixture and mold into bars or other shapes using your hands.

Wrap these in wax paper and store in the fridge.
