I love baking with organic spelt flour - because I’m slightly wheat intolerant I find that spelt is the perfect option and especially if you’re not celiac you can still have this as well. It does have a small amount of gluten in it but it doesn’t seem to affect me. Baking my bread with spelt means I don’t have the bloating issues I have with wheat.
Being gluten free mostly for years I have find like some that I can use spelt and not have any digestive issues. So nice to be able to use like plain wheat flour and enjoy the good flavour!
