About
Adzuki beans, native to east Asia, have a sweet nutty flavour and are easy to digest. They are a good source of protein and dietary fibre with the added bonus of being low in sugar. Naturally gluten-free, adzuki beans are popular in Asian-inspired recipes for anything from sweets through to soups and salads. They can also be a tasty and filling addition to European-style dishes, such as casseroles and bakes. Adzuki beans are delicious and versatile in a range of sweet and savoury dishes, therefore make for a perfect pantry staple. You can even soak them in advance and store as a handy pantry stand-by when whipping up something quick for lunch or dinner.
Uses
To cook dried adzuki beans, start by rinsing them thoroughly in water, or even soak in water overnight before cooking. Add 3 cups of water to every 1 cup of beans in a pot, bring to the boil then reduce to simmer for about 45-60 minutes or until the beans are tender. It is best not to add salt to the pot of adzuki beans while they are cooking, as this can make the outer skins tough. Adzuki beans are a great addition to veggie patties, salads, soups and stews. They provide a fudge-like consistency to healthy baked goods like muffins, brownies and slices.Ā
