Uses
What you’ll need: 2 eggs + ½ cup of any liquid (any milk, water, or yoghurt)
Makes 1 batch
For Pancakes: (6 large pancakes)
- Whisk 2 eggs, ½ cup milk, and 1 cup (120g) pancake mix in a large bowl until smooth.
- Let sit for 5 minutes.
- Gently whisk again, adding another tablespoon of water or milk if too thick.
- Pour batter onto hot griddle using 2 T per pancake.
- Cook until edges are firm, flip, repeat and eat!
For Waffles: cook in waffle iron until slightly crispy on the outside
Vegan option: Remove the egg and use plant-based yogurt, chia egg or flax egg.
