The buds of the caper plant, preserved in brine. The smaller a caper, the more intense the flavours; Delmaine capers are surfines, the second smallest available. Perfect to add a salty, citrus flavour.

Uses
Try frying them in a pan to add a crunch to your salad. Perfect to add a salty, citrus flavour to seafood, particularly smoked salmon.
They make fun additions to a great variety of recipes, not only seafood but tapas, pasta and sauces.
Try making a herb caper sauce: Heat olive oil, shallot and garlic cook on low heat, add lemon juice, zest and capers - stir in mint and parsely. Enjoy over meats or vegetables!
