Sweet basil is the variety of basil that has been dried for culinary use, providing a distinct aniseed-like flavour. Dried basil leaves don’t quite live up to fresh basil in terms of smell, however they do have a more pungent taste when added to soups, stews and casseroles.

Uses

Basil can be considered an absolute essential ingredient in all Italian cooking and in a lot of Thai cuisine. It matches perfectly with tomatoes, onions, garlic and olives in pizza, pasta and salads. Fresh basil is commonly the main ingredient used in pesto, as well as some risottos, soups and stews.
