This organic potato starch is made from organically grown potatoes that have been peeled, mixed with water and then dehydrated to form potato starch flour. Due to this unique process it contains resistant starch, which functions kind of like soluble fibre and therefore has various benefits for digestive health. It is a light and very fine flour that readily absorbs water when heated, therefore it works well as a thickening agent. It lends a light, soft and moist texture to baked goods that is hard to match with any other flour. Uses
