Red kidney beans can be considered a superfood favourite that is full of folate and fibre, both of which promote cardiovascular and overall heart health. They are also an excellent source of dietary fibre, manganese, phosphorus, vitamin B1, iron, potassium and magnesium. Kidney beans are medium sized with a reddish-brown colour, a hearty texture and a mild nutty flavour.
Pre-soak the beans overnight in a large bowl or pot using a 1:4 ratio of beans to water. This step is important to make the beans’ nutrients accessible and make the beans themselves more digestible. Once cooked, kidney beans are a great meal base in all Mexican dishes (particularly if you’re cooking vegan or vegetarian), in Indian curries, fresh salads, soups and stews. They are also commonly included in Asian sweets and desserts, while smashed kidney beans are delicious in dips and as an inclusion in burger patties. Kidney beans soak up their surrounding flavours beautifully so be sure to use plenty of herbs and spices when cooking with these hearty legumes.
