Organic Activated Buckwheat

About

Buckwheat is a seed that naturally contains compounds that makes it hard to digest. These compounds may also stop buckwheat from releasing all its nutrients until it is at the point of sprouting. Activating buckwheat is essentially tricking it into thinking that it is sprouting, therefore releasing its nutrients and making it fresh, sweet and crunchy to eat. The process of activating involves sprouting the buckwheat by soaking it in water and then dehydrating at a low heat (below 47°C) to make it digestible, delicious and moreish. Buckwheat is very filling due to its high content of dietary fibre, and is also packed full of high quality protein with a good mix of vitamins and minerals. It is a great pantry staple for many sweet and savoury recipes.

Uses

Activated buckwheat makes a deliciously crunchy base to homemade granola, mixed in with your choice of other nuts, seeds, dried fruits and a sweetener such as honey or maple syrup. This Cacao Granola is a truly life-changing combination of buckwheat, nuts, seeds, cacao and dried fruit making the ideal breakfast to kickstart your day. Add activated buckwheat into a trail mix to fill it out, or add a sprinkling to smoothie bowls, porridge, yoghurt and/or fresh fruit for additional protein, fibre, minerals and crunch. Since this buckwheat is already activated, it’s simple to use in raw food recipes for energy bars and balls, vegan chocolate creations and even cakes and slices for a yummy, biscuit-y base. Try out these Raw Mango Cheesecakes at your next celebration; they definitely won’t disappoint! Activated buckwheat is also a great base ingredient in homemade breads and loaves, providing flavour, nutrition and a yummy crunchy consistency.
