Remember the good old days when you’d bake cookies with your mum and if you were lucky she would let you lick the spoon? Well then get ready for a boat load of nostalgia because these raw vegan cookie dough bites will send you straight back to your childhood. If you aren’t already dreaming of a sweet dough with a chocolate chip crunch then something that is sure to get you fantasising about this recipe is that it is full of wholesome ingredients and can be whipped up in less than five minutes! These bites also pack a punch when it comes to plant protein so they make the perfect pre or post-workout snack, or 3pm pick-me-up.

Ingredients:

¾ cup cashews 
½ cup oats 
½ cup vanilla pea protein powder 
Pinch of himalayan salt 
1 cup pitted dates (about 10)
¼ cup cacao nibs or dark chocolate chips

 

Method:

Add the cashews, oats, himalayan salt and protein powder to a food processor and process until no chunks remain.

Add the dates and blend until a dough forms. You may want to soak your dates prior to blending depending on the strength of your food processor.

Continue to blend until the dough becomes a ball then transfer into a bowl.

Mix in the cacao nibs or chocolate chips and then roll into balls.

Store in either the fridge or freezer.
