As the temperature gets colder and the windows get frostier, a nourishing breakfast is just what you need to warm up from the inside out and beat those winter blues. We all know that porridge is the perfect winter breakie but it can get a bit boring so why not spice up your morning with this apple pie porridge? With chewy dried apple and warming spices, this bowl of goodness is sure to quickly become a favourite. Not only is this recipe quick and easy but it is also packed with goodness (unlike the usual sugar-filled microwave oat sachets) and the fibre from the oats will keep you full until lunchtime.  

Serves 1

Ingredients:

100g quick cook oats 
1 cup nut mylk of choice
½ cup water
30g dried diced apple 
1 tsp cinnamon 
½  tsp ground ginger 
¼  tsp nutmeg 
1 tbsp maple syrup*

Method:

In a medium saucepan combine the oats, nut mylk, water, apple and spices.

Cook over a medium heat for about 15 minutes, stirring often until the oats are cooked and it becomes thick and creamy. Add more liquid as required.

Remove from the heat and pour into a bowl with a drizzle of maple syrup.
