This wild rice based nourish bowl is the perfect lunch to take to work or school. It’s easy to prepare and keeps well for eating the next day. Filled with different veggies and protein, a top of an antioxidant rich base of wild rice. For a serious flavour punch, it’s all tied together with a creamy tahini dressing laced with lime and miso – nutty, zingy and slightly sweet!
2 cups cooked wild rice*
2 cups chopped kale (or leafy greens of choice)
1 cup shredded red cabbage
2 serves of tofu (or protein of choice)
2 large tomatoes, chopped
½ cup mung bean sprouts
¼ cup tahini*
1 tablespoon miso paste
Juice of 1 small lime
1 tablespoon maple syrup*
Water to thin

1. To assemble the bowl, add the rice, kale, cabbage, tofu, tomatoes and sprouts to 2 bowls.
2. To make the dressing, mix together the tahini, miso, lime and maple syrup in a small bowl. Whisk well, add water a spoonful at a time until the desired consistency is reached.
3. Drizzle dressing generously over both bowls, keep any extra in a glass jar in the fridge.
