Sumac Roast Vege Winter Salad

One of the best ways to enjoy and get the benefits from vegetables in the winter is by roasting them and simple vegetables such as cauliflower and parsnips can be taken to the next level with the addition of spices. One spice that is often overlooked is sumac- a spice that is extremely fragrant and helps to bring out the earthy flavours of hearty winter vegetables. These sumac roasted veggies are the perfect side of accompaniment to any main meal; roasting up a whole tray like this is also perfect for meal prep as it means that if you’re short on time during the week, you’ve already done half the work to throw together a quick yet wholesome meal. 


2 medium kumara

1 cup chopped pumpkin

1 large parsnip

1 cup cauliflower florets

3 tsp sumac

A good drizzle of oil of your choice

Salt to taste



1. Preheat your oven to 200 degrees and line a baking tray. Chop up all of the vegetables then add them to the baking tray.

2. Sprinkle the sumac and salt over the vegetables and drizzle with oil. Use your hands to toss and make sure all the veg are evenly coated.

3. Place in the oven and cook for 30-35 minutes, or until tender and golden.  

4. Enjoy as a side to your favourite meals or a warming winter lunch, great as a packed lunch on work days! Add a little rocket, feta and a few toasted pine nuts for a tasty salad.
