A healthy twist on the classic cream-stuffed chocolate cookie sandwich that is guaranteed to satisfy any sweet tooth. Quick, easy and packed with whole food ingredients, these raw delights are quite the opposite to their processed counterparts but are equally (if not more) delicious. All you need is a handful of simple ingredients and in only a few simple steps you’ve got yourself a batch of delicious raw chocolate cookies and a bowl of smooth vanilla cashew cream. These come together to make the ultimate healthy indulgence.
½ cup oats
¾ cup almonds
1 cup pitted dates
4 tbsp cacao powder
Pinch of himalayan salt
1/2 tsp vanilla powder
1 cup cashews (soaked for at least 3 hours)
1 tsp vanilla powder
2 tbsp maple syrup*
2 tbsp nut mylk
Add the oats, almonds, cacao and salt to a food processor and process until the ingredients are completely broken down.
Add the dates (you may want to soak your dates prior to blending depending on the strength of your food processor) and vanilla and process further until it reaches a dough-like consistency and comes together as a ball in the food processor.
Place a piece of baking paper on top of a cutting board and transfer the mixture onto this. Place another sheet of baking paper on top of the dough and use a rolling pin to roll the dough flat.
Use a cookie cutter to cut circle shapes until all the dough is used up, then place the cookies in the freezer.
To make the filling, drain and rinse the cashews then add the to a food processor with the vanilla, maple syrup and nut mylk. Process until smooth and creamy.
Spread the filling onto the cookies and sandwich together.
Store the cookies in the fridge.
