These raw energy bars are the perfect 3pm pick-me-up or pre-workout snack. Not only are they packed with nourishing, wholesome ingredients but they also have a lot of flavour and are guaranteed to satisfy any sweet cravings. They only take a few minutes to whip up and require no cooking whatsoever. This recipe has the perfect balance of chewy and crunchy but feel free to play around with the ingredients, like adding in your favourite dried fruit or swapping almonds for cashews.
Ingredients
½ cup buckwheat
1 ½ cup oats (divided)
1 cup almonds (divided into 2 half cups)
1 tsp cinnamon
1-2 tbsp maple syrup* (depending on the stickiness of the dates)
½ cup golden inca berries (or dried fruit of choice)
½ cup coconut chips
½ cup pumpkin seeds
Method
Add 1 cup of the oats, ½ cup of almonds, buckwheat, cinnamon, maple and dates to a food processor and process until combined. If your food processor isn’t a high power processor, you may want to soak the dates in hot water for a few minutes to soften them.
Transfer the mixture to a large mixing bowl and add the rest of the oats and almonds, as well as the golden inca berries, coconut and pumpkin seeds. Mix until well combined.
Press the mixture into a lined baking tray then place in the fridge or freezer for about 20 minutes.
Remove from the tray and slice into bars.
Store in the fridge in an airtight container for up to a week.
