Raw Brownie

Everybody loves a good brownie but your typical slice is usually filled with refined ingredients that may leave you feeling a bit blah. Not these babies! Packed with nutrient dense ingredients, this raw and healthy take on your traditional brownie is sure to not only leave you feeling great but also to satisfy any sweet cravings. Sweet, fudgey, chocolatey – there are certainly no sacrifices when it comes to flavour and with the addition of crunchy walnuts, cacao nibs and chewy goji berries, these are sure to become your go-to nutrient packed treat! What’s even better is that they only require five base ingredients, a food processor, no mixing bowls (no dishes, yay!) and not even an oven. So do your hangry, mid-week, 3pm-self a favour by taking a few minutes to whip up a batch. You definitely won’t regret it.

Ingredients

Brownie:

1 cup (130g) almonds

1 cup (90g) walnuts

About 20 (2 cups) pitted dates

¾ cup (40g) cacao powder

Pinch of pink himalayan salt

Toppings:

Goji berries

Cacao nibs

Crushed walnuts

Method

Add the walnuts, almonds, salt and cacao powder to a food processor and process until finely ground.

Soak the dates in hot water for a few minutes until soft, then drain and add to the food processor.

Process until a dough consistency is achieved and the mixture holds together when squeezed in your hand.

Add the brownie mixture to a baking tray that is lined with baking paper and press evenly into the tray.

Sprinkle a small handful of each of the goji berries, cacao nibs and crushed walnuts on the top and place in the fridge for 20-30 minutes before cutting into 12 even squares.
