These protein bars are the perfect snack for on the go, post workout or as an afternoon pick me up. They are jam-packed with plant protein and healthy fats to give you the perfect boost of sustained energy. The use of puffed grains lightens them up and the addition of the almonds and crunchy peanut butter adds a satisfying crunch. They are best stored in the fridge and if being taken on the go, wrap them in a piece of baking paper or reusable wax wrap to keep them intact.
1 cup puffed buckwheat*
1 cup puffed amaranth
¾ cup peanut butter
½ cup brown rice malt syrup*
½ cup vanilla pea protein
½ cup slivered almonds
2 tbsp white chia seeds
*Ingredients can be purchased in store at your local GoodFor refillery.
In a large mixing bowl, combine the peanut butter and rice malt syrup.
Then add the buckwheat, amaranth, pea protein, almonds and chia seeds.
Mix well until combined and the mixture begins to clump together.
Line a rectangle baking tin with baking paper then press the mixture in.
Fold over the baking paper to help you compact the mixture. It should be very tightly packed.
Place in the freezer for about an hour to help it set then remove from the freezer and slice.
They are best stored in the fridge to help them retain their shape but can be taken out and about with you go when you know you’re going to need a nourishing snack.
