Crunchy, chewy and full of deliciousness. These little bars of goodness are the perfect on-the-go snack or afternoon pick me up. They also contain a good hit of plant based protein thanks to the peanut butter and wholesome grains like oats, quinoa and buckwheat.
½ cup crunchy peanut butter
½ cup + 3 tbsp brown rice malt syrup*
1 cup quick rolled oats
1 cup jumbo rolled oats
1 cup quinoa puffs*
½ cup buckwheat puffs*
½ cup cashew pieces
½ cup sunflower seeds
¾ cup dried cherries
Preheat your oven to 170 degrees. Line a square baking tin with baking paper and set aside.
In a bowl, mix together the peanut butter and brown rice malt syrup until smooth and fully combined.
In a separate, larger bowl, add the oats, quinoa puffs, buckwheat puffs, cashews, sunflower seeds and dried cherries. Mix well.
Fold in the peanut butter mix and stir well until everything is evenly coated and clumps together.
Transfer the mix to the tin. Press down firmly until the mix is tightly packed.
Place in the oven and bake for about 25 minutes or until golden on top.
Remove from the oven and allow to cool fully before slicing.
