Aren’t plants amazing? There is a plant based substitute for everything and one magical plant creation is bacon made out of coconut. Yup, you read right. This recipe is for salty, smoky, crispy and slightly sweet coconut bacon that makes the perfect salad topper or sandwich filler. All you need is five ingredients, a bowl and an oven and you’ve got yourself a whole heap of flavour-packed (and addictive) coconut bacon. Try it on top of baked potatoes, pizza or roast veggies. The possibilities are endless!
2 ½ cups coconut chips
2 tbsp tamari*
½-1 tbsp liquid smoke (depending on how smokey you want it)
1 ½ tbsp maple syrup*
1 tsp smoked paprika
Preheat your oven to 160°C and line a baking tray.
Add all of the ingredients to a large bowl and stir thoroughly until the coconut is all evenly coated.
Spread the coconut evenly on the lined baking tray and bake for 10-15 minutes, stirring every 5 or so minutes.
Keep a close watch in the last few minutes of cooking as they can go from golden to brown very quickly.
Remove from the oven and let cool for about 10 minutes, it will continue to crisp us as it cools.
