Fruit mince tarts

Ingredients

Fruit mince
2 apples
1 cup sultanas
½ raisins
½ cranberries
½ dried cherries
Juice of 2 large oranges
Zest of ½ orange
1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon nutmeg
1 teaspoon vanilla extract
Crust
1 ½ cups rolled oats
½ cup almond meal
½ cup dessicated coconut
1 tablespoon ground flaxseed
3 tablespoons water
3 tablespoons maple syrup
1 teaspoon vanilla extract
Pinch salt
2 tablespoons coconut oil
Method
Preheat your oven to 180 degrees.
Chop the apples then add all the ingredients for the fruit mince to a large saucepan and simmer over a gentle heat for about 30 minutes.
Once all the liquid has evaporated, turn off the heat and leave to cool.
To make the crust, start by mixing the flaxseed and water to create a ‘flax egg’. Leave that to thicken for about 15 minutes.
Add the oats, almond meal and coconut to a food processor and process until it becomes a fine flour.
Add the rest of the crust ingredients to the food processor and process until a clumpy dough forms.

Grease a small muffin tin with coconut oil.
Roll out the crust dough between two sheets of baking paper until it is about ½ cm thick.

Cut out 10 circles and 10 stars from the dough. It may be slightly crumbly but if any cracks appear they can easily be fixed by pressing back together with your fingers.
Press the circles into the tin and fill with about 1 teaspoon of fruit mince then top with a star.

Repeat until all the tarts are filled then bake for 10-15 minutes.
Remove from the oven once the tops become slightly golden then dust with coconut flour and enjoy.
