The classic Bounty Bar is always a crowd favourite and this wholesome version of the chocolate and coconut bar is sure to delight everyone’s tastebuds. Not only are these babies free from dairy, gluten and refined sugar, they are also super duper easy to make and can even be kept in the freezer so you are always prepared for when those sweet cravings hit.
3 cups desiccated coconut
3-4 tbsp liquid sweetener (maple syrup* or brown rice syrup* work well)
1 tsp vanilla extract
3 tbsp coconut oil*, melted
¼ cup coconut milk
High quality dairy-free chocolate
Add the coconut to a food processor and blend for about 30 seconds.
Add the vanilla, coconut milk and sweetener and blend again.
Fold in the coconut oil and stir well.
Transfer to a lined baking in and press down firmly.
Place in the freezer for at least 5 hours.
Once the coconut is firm, remove from the freezer and cut into bars. You may have to wait about 10 minutes for the coconut to soften enough to cut it.
Melt the chocolate in a double boiler then coat the bars in the chocolate.
Return to the freezer for a further 15 minutes then enjoy.
