Easy midweek dinner, meal prep for lunches, feeding a crowd or nourishing the soul. This pesto pasta really can do it all. And this green deliciousness is not only packed full of flavour but also is free from dairy, gluten and has a nut free option, as well as being completely vegan. Everyone can enjoy this nourishing rendition of a tasty classic!
2 cups fresh basil
2 tbsp olive oil*
2 cloves garlic, crushed
¼ cup nutritional yeast
Juice of ½ a lemon
½ tsp pink himalayan salt
½ tsp cracked pepper
Pasta of choice (gluten free rice and quinoa pasta is used here)
Add all the ingredients to a blender and blend until smooth.
Once the desired consistency has been reached, transfer to a bowl or jar.
This can be stored in a jar in the fridge for up to one week and can be used as a dip, spread, sauce or dressing!
Or you can stir through your favourite pasta and enjoy as a quick, easy and nourishing meal.
